  • Onion: Any type of onion is fine. I usually use a white or yellow onion.

  • 2 (14.5 oz / 410 g) cans low-sodium chicken broth
  • 1 (7 oz / 200 g) can diced green chilies
  • 1 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • salt and freshly ground black pepper, to taste
  • 8 oz / 225 g cream cheese, cut into cubes
  • 1 1/4 cups / 200 g / 7 oz frozen or fresh corn
  • 2 (15 oz / 425 g) cans cannellini beans
  • 3 cups / 375 g / 13.2 oz shredded cooked rotisserie
  • 2 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro, plus more for serving
