About Me

Ken Scott American Frontier Artist
I am an artist whose work has an intensely historical, even biographical concept to it. I see the objects that I paint through the eyes of a 18th century artist and craftsman. My goal as an artist is to create every item with an historical past with an aged look and feel to it.I made a pouch for the Leonardo DeCaprio movie, The Revenant" as well as the pouch for Billie Bob Thornton (Davey Crockett) for the movie The Alamo, and also provided other props for this movie. Early American Life magazine thrice named me one of the top craftsmen in America for both my paintings and my leatherwork.. My pouches were rated for their quality workmanship, fidelity to period design and construction techniques by judges expert in museum-quality antiques and fine, high-end reproductions. My work has also been featured in videos, tv documentaries and numerous times in magazines and on their covers.Thank you for visiting my blog.

FAQs

What does vinegar do in pie? ›

Though the science is sketchy, a few professional pie bakers swear that it improves the texture of the crust, and they wouldn't dream of making pie dough without it. (Others swear by similarly acidic ingredients like lemon juice.) The acidic properties of vinegar inhibit gluten, some will say.

Why do you put apple cider vinegar in pie crust? ›

The acid in the apple cider vinegar tenderizes the dough by slowing the gluten production in the dough. This prevents it from getting tough and elastic like bread dough. Love me tender. If you've ever bitten into a slice of pie with a tough crust, you know the value in a tender, flaky pie crust.

Does vinegar inhibit gluten formation? ›

Vinegar can affect the gluten development in dough. Gluten gives dough structure, but too much gluten development can make dough tough. Acid can hinder gluten development; so, a bit of vinegar (or lemon juice) can make pie dough slightly more tender.

What does vinegar do in dough? ›

And It's not just cakes that benefit from a touch of vinegar, but also biscuits, muffins, and even bread. So when it comes to bread, it's the same concept – vinegar inhibits gluten formation which leads to a more relaxed and extensible dough, resulting in a less dense and chewy bread.

What does vinegar pie taste like? ›

What Does Vinegar Pie Taste Like? No, vinegar pie is not bitter, tart, or sour. In fact, it's sweet! The flavor of your pie is a bit dependent on the type of vinegar you use (more on that below), but the combination of fruit vinegar, sugar, lemon juice, and butter creates a sweet, slightly lemony, and even juicy pie.

What does white vinegar do for pie crust? ›

But there are two much more important perks to using vinegar: it provides a little insurance against overworking the dough. And, that splash of vinegar will keep your dough from oxidizing and turning gray. Fresh All-Butter Pie Dough with vinegar (right) and without (left).

What is the secret to a great pie crust? ›

Cold butter is the key to flaky crusts. Do not skip this step. You must put your butter in the freezer to get it nice and cold. Many people do not like working with frozen butter, but it makes all the difference in the world when you create your pie dough.

Is pie crust better with shortening or butter? ›

This time, though, there was one very clear victor. Butter made a tastier, flakier, sturdier crust by far. This isn't to say that shortening and lard aren't useful ingredients. Shortening is a great way to get incredibly tender desserts.

Why do you put vodka in a pie crust? ›

The vodka works for two reasons. First, it makes the dough feel way more moist and easier to work with. Second, the ethanol in the vodka stops the gluten in the flour from binding, making for a more tender end product.

Why did my pie dough turn GREY? ›

“Well-wrapped, pie dough can be stored in the fridge for two to three days, or in the freezer for up to three months,” says David. “After day three in the fridge, you can expect your dough to oxidize, turning a grayish color.” This is completely normal, but can be postponed by adding a bit of vinegar to your recipe.

Is vodka better than water in pie crust? ›

The water in pie dough is necessary for workability, but too much is a bad thing. By replacing some of the liquid with vodka you are inhibiting gluten formation. Gluten forms when flour is in contact with water and is agitated. It does not form in alcohol, so it is a natural choice.

Why do you put vinegar in brownies? ›

I also mixed a little cocoa powder with confectioners' sugar to sprinkle over the cooled brownies before serving. Vinegar: White distilled vinegar is added to the batter to react with the baking soda, causing the brownies to rise. The vinegar also helps activate the cocoa powder for a more chocolatey flavor.

Why does my dough taste like vinegar? ›

Is this normal? Yes. The lactic acid bacteria in your starter creates acetic acid, which is essentially a type of vinegar.

What happens when you mix vinegar and baking? ›

Mixing baking soda (sodium bicarbonate) and vinegar (acetic acid) causes a chemical reaction that produces a salt (sodium acetate) and water, as well as carbon dioxide gas. In this demonstration, baking soda is placed in a balloon that is attached to a flask holding vinegar.

Does vinegar enhance flavor? ›

But many great chefs have another flavor enhancer in their arsenal: vinegar. Like salt, acids such as vinegar or lemon juice compete with bitter flavor compounds, lessening our perception of these tastes as they “brighten” remaining ones.

What happened when vinegar was added to baking? ›

A chemical reaction between the vinegar and the baking soda produces bubbles of carbon dioxide gas. The dish detergent in the vinegar helps the bubbles last longer than they would with just vinegar and baking soda.
