potato chips recipe | homemade potato wafers | aloo chips recipe with step by step photo and video recipe. chips or fries have become a common language all over the globe. the seasoning and topping can be of a wide range which adds the additional flavour and taste to it. yet the simple chilli and salt flavoured classic potato chips recipe is evergreen and can be made quickly without heading to the grocery store.
i guess there isn’t anyone who does not like chips recipe. we all like it. but prefer to buy it from the grocery shop. i guess the main reason could be the assumption that it is one of the complicated recipes. also, the other common assumption is it may need sophisticated instruments to prepare it. but trust me it is one of the simple and easy recipes to make. the only critical part for this recipe is the use of potatoes. basically you need to select a potato which has more starch and less of water content in it. generally, all red potatoes are good for any deep-fried snacks. particularly, you may use kipfler potatoes, dutch cream & red royale potatoes are ideal for chips, potato fries and potato wedges recipe.
furthermore, i would like to add some more tips, suggestions and variations to aloo chips recipe. firstly, as i was explaining earlier, you need to choose those potatoes which are rich in starch content. yet we do not need for this recipe and hence you have to dip the sliced ones in cold water to remove excess starch. secondly, you need to be cautious while deep frying. the oil has to be hot and the deep frying has to happen in medium flame. also, once it is deep-fried, do not use a paper towel or tissue paper to remove excess oil. use a sieve to place the deep-fried chips, so that air can pass on both sides. lastly, store these in an airtight container for longer shelf life. it should last long for a week and may turn soggy afterwards as preservatives are not added.

Ingredients
- 3 potato, large
- 4 cup chilled water, for rinsing
- 1 tsp kashmiri red chilli powder
- ½ tsp salt
- oil, for frying
Instructions
firstly, peel the skin of the large potato. make sure to use a large potato to get good slices.
slice the potato as thin as possible.
now transfer the potato slice to a large bowl and add chilled water.
rinse well and spread on kitchen towel.
rub off the excess water. this helps to prevent oil spluttering.
drop the sliced potato into hot oil without overcrowding.
stir occasionally and fry on medium flame.
fry until the chips turn crispy.
drain off into a colander. do not drain over kitchen paper as it turns chips soggy.
now add1 tsp chilli powder and ½ tsp salt.
toss and mix well making sure all the spices are coated.
finally, enjoy potato chips recipe or store in an airtight container for a month.
