I had to share this with you… my 2-year-old swiped my son’s plate when he got up to use the restroom. She LOVED this meatloaf! This is her yelling at him when he came back to the table…she was caught “red handed” (and red faced!)

Meatloaf Recipe
Glaze:
1/2 cup ketchup
1/3 cup brown sugar
1Tbsp real lemon juice
1 tsp prepared mustard

Meatloaf:
1 1/2 lbs ground beef
1 1/2 cups bread crumbs
1/4 cup chopped onion
1/3 cup glaze
1 egg
3 Tbsp real lemon lemon juice **A secret…shhhhhhh

Preheat oven to 350.

1. Combine all of glaze ingredients in a medium sized bowl and set aside

2. In a large bowl combine meatloaf ingredients and 1/3 cup of your glaze

3. Shape into a loaf and bake 1 hour; pour off fat

4. Cover with remaining glaze and place back into oven and bake an additional 15 mins or until done in center.

Enjoy!

~Janelle

  4. I absolutely love meatloaf. This has been something that I make regularly now. My husband told me that his grandma put ketchup on top. I thought yuck! Now that I see it prepared THIS way, I’m guessing she probably put more than ketchup on hers too. I use bbq sauce and brown sugar. Yum!!!

  11. Enjoy ladies…this is one great recipe that I have made over and over for years. In fact, I’m making it this week! Hi Sarah…There is plenty of salt in the ketchup base and flavor in the onion in the meat for my personal taste. However, you are always welcome to add salt and pepper to your liking with any recipe. If you try it and want to add salt and pepper…absolutely do so 🙂

Use high-fat meat.

The leaner the meat, the dryer and grainier the meatloaf. For an all-beef meatloaf, always use a higher-fat cut, at least 15 percent. For a meatloaf made with a leaner beef or turkey, consider mixing in some ground pork and/or veal in order to achieve a moist, tender meatloaf.

Why milk instead of water in meatloaf? ›

Should you bake meatloaf covered or uncovered? ›

Should I cook my meatloaf covered or uncovered? The meatloaf can be cooked uncovered. However, if you are concerned about it burning, you can cover the meatloaf with foil for the first 45 minutes and uncover it for the final 15 minutes to allow the meatloaf to brown on top.

What can you put under meatloaf to soak up grease? ›

A neat trick to soak up the grease under your meatloaf is to line the bottom of the pan with bread slices. The bread soaks up the grease as the loaf bakes. When the meatloaf is done, you can either throw out the bread or bake it to make some truly indulgent toast.

What is the best binder for meatloaf? ›

The most traditional meatloaf binder is probably torn up bread soaked in milk, but you can also use bread crumbs, Panko, dehydrated potato (instant mashed potatoes), or just about any other grain.

Is it better to cook meatloaf at 350 or 375? ›

The oven temperature is typically set at 350 degrees F for making meatloaf. That's the temperature you want to be sure to use so the meatloaf cooks and doesn't dry out. Too high, and the outer crust will burn before the interior is cooked all the way, too low and you don't get that delicious crust.

What is traditional meatloaf made of? ›

No bells and whistles - just a few ingredients including beef, egg, bread crumbs and a simple tomato-based topping. Use a gentle touch with ground beef. Over-mixing will result in burgers, meatballs or meatloaves with a firm texture.

Why do you put baking powder in meatloaf? ›

Adding baking soda to the beef keeps it moist by stopping the proteins from binding too quickly (which dries out the meat). Using sauteed onions instead of raw ensures the onions don't turn out crunchy and adds extra moisture to the meatloaf. Moistened breadcrumbs, keep the meatloaf moist and tender.

How do you firm up meatloaf? ›

One of the most common reasons meatloaf is watery is an overabundance of liquid ingredients. Adding broth, milk, or eggs can enhance flavor and moisture, but too much can lead to a soupy consistency. Use these ingredients sparingly, and consider adding breadcrumbs or oats to absorb excess moisture.

Why is my meatloaf mushy and falling apart? ›

When this happens, it's because you didn't use enough. Next time, try adding in an extra egg and/or some more breadcrumbs. Alternatively, rice, barley, corn flakes, crackers, and dried soup mix can also stand in as binding ingredients as well. Including larger quantities of these items should help solve the problem.
