"I found this recipe on the alohaworld website (http://alohaworld.com/ono) and just adore it! I'm always looking for a good banana bread recipe and this one fits the bill! It's moist and has a nice crisp, almost caramelized crust. Now if I could just figure out how to keep the crust during storage!"

  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 12 teaspoon salt
  • 34 - 1 cup sugar
  • 12 cup canola oil
  • 14 cup butter or 1/4 cup margarine, melted
  • 14 cup nuts, chopped (optional)
  • 1 teaspoon vanilla
  • 2 cups ripe mangoes, chopped coarsley
  • 1 overripe banana, chopped
  • 3 eggs, beaten
  • 12 cup raisins (optional)
  • 12 cup shredded coconut (optional)

  • Combine dry ingredients in a large bowl. Make a well in the middle and add other ingrediendt. Mix thoroughly. Pour into a greased loaf pan and let stand for 20 minutes. Bake at 350 for 45 minutes to an hour or until nicely browned and the "skewer test" comes out clean or with just a few crumbs.

  1. I made this recipe this morning and it turned out wonderful! A couple of tweaks: I didn't add nuts or coconut, but I did use real butter and added a brown sugar streussel topping. Then I baked it for 50 minutes.

  2. This is an awesome recipe. I used 1/4 cup canola oil and 1/4 cup 0% fat fa*ge plain Greek yogurt. I was out of raisins so used goji berries and they were a big hit. I used 1/2 brown sugar and an extra banana instead of white sugar and they were sweet enough. I used one cup flour and 1/2 cup flaxseeds and 1/2 cup chia seeds that I turned into flour in my coffee bean grinder. There were super moist. I am experimenting today with 1 cup oat flour and flax and chia flour that I am grinding in my coffee bean grinder. I added toasted pecans to my muffins and sprinkled old fashioned oats on the top before baking.

  3. Awesome. Made it into muffins. Used all ingredients as suggested except used frozen mango and brown sugar. Came out beautiful. Next time I may add a bit of whole grain flour and see if they still work.

  5. I followed the recipe but used mauna loa macadamia baking pieces dry roasted but my kids don't care for the raisins so did not put this in,my bread came out so yummy. and my family enjoy it so much will have to make more. mahalo for sharing.

  1. I loved this bread! I thought the banana and mango was a delicious combination.I recently made just plain mango bread but I prefer this one with banana.I only had one large mango so I added an extra banana.I left the coconut out but I did add the raisins which I really liked in this.I also used applesauce in place of half the oil.This bread was extremely moist and delicious.I will definately be saving this recipe.

  2. Two thumbs up without a doubt. I did omit the nuts, raisins and coconut. And used applesauce instead of butter. I'm sitting here having just finished a piece and am struggling not to get up for another....but I will. Thanks for the grrreat recipe.

I'm a weightwatchers lifetime member (though it seems like that was a lifetime ago!), a knitter, crocheter, former scrapbooker, and a wife and mother! I love seafood and look forward to vacations in the Outer Banks (NC, baby!). I am half Polish and have fond memories of my father making all kinds of homemade Polish meals as well as any other cuisine he could imitate!I can't stand olives but have just learned to like cole slaw!I'm trying to teach my daughter to eat healthfully and am learning how to sneak veggies into meals for her AND hubby!!!
