Blackened Walleye
Since moving to Michigan I see Walleye everywhere, so I had to make it myself! I made this blackened walleye recipe and a broiled walleye recipe.
Making Blackened Walleye in a skillet is one of my favorites ways to cook this freshwater fish. This Walleye recipe packs a little heat. If you don't like spicy, you can always reduce or omit the cayenne pepper.

Ingredients
- Walleye filets
- seasonings: smoked paprika, cayenne, Italian seasoning (or thyme, basil, and oregano seasonings), salt, garlic powder, onion powder, black pepper
- avocado oil
Tips & Tricks
Fresh or frozen walleye fillets can be used in this recipe. If you use frozen walleye, make sure that your fish is completely thawed. Use paper towels to remove any water that may be on the fillets.
Tools to make this easy recipe
For this recipe all you need is a non-stick or ceramic skillet.
How to make Blackened Walleye
- Check the walleye for pin bones. Remove them, you may need tweezers or pliers if they're really stuck in place.
- In a small bowl combine all of the seasonings.
- Sprinkle the seasonings on top of the walleye
- In a large skillet heat up 2 tablespoon of avocado oil over medium high heat.
- Cook the walleye for 2-3 minutes on each side until it reaches an internal temperature of 145F.
Oven Directions
Preheat the oven to 375F. Season the walleye with the spice blend.
Place Blackened Walleye on a oiled baking sheet. Bake the walleye for 15 to 20 minutes or until well browned and fish is cooked and easily flakes with a fork.
Substitutions
Almost any white fish fillet can be pan fried using this recipe, like tilapia or haddock. Cooking time may vary depending on the size of your fillets. You can also use a store bough cajun or blackened seasoning.
What to serve with Blackened Walleye
This Blackened Walleye pairs nicely with almost everything. If you are not carb conscious then this Instant Pot Basmati Rice or Roasted Potatoes and Green Beans would be delicious.
If you are counting carbs, then try these: Air Fryer Parmesan Asparagus, Instant Pot Mashed Cauliflower, or these Air Fryer Brussel Sprouts.
How to store
Store in an air tight container for up to 2-3 days.
How to reheat
Place on a plate and microwave for 1-2 minutes or until warm.
