Crispy and savory chicken breasts grilled to perfection and simmered in a luscious roasted pepper sauce. Dinner is ready in less than 30 minutes!

Ingredients you need for the Skillet Chicken in Roasted Pepper Butter Parmesan Sauce

2lbs. (900g) boneless skinless chicken breastsor 3 medium chicken breasts1 jar roasted bell pepper sauce (usually found in the pasta sauce aisle of your grocery store)2 teaspoons Italian seasoning1 pinch ofCayenne Pepper, optional2 – 3 tablespoonsolive oilSalt and freshly cracked pepper, to taste1/3cupunsalted butter, diced2 heaping tablespoons grated Parmesan cheese, plus more for garnishFresh chopped parsley or basil, for garnish

Directions

1. Season chicken breasts with Italian seasoning, salt and pepper on both sides. Heat olive oil in a large skillet over medium-low heat. Add the chicken breasts to the pan and cook for about 5 minutes per side, or until a nice golden brown and juices run clear. Transfer chicken to a plate.

2. Reduce the heat to low, then add your roasted bell pepper sauce to the same skillet with the oil and Cayenne pepper. Slowly increase the heat to medium-low and bring the sauce to a gentle simmer. Simmer for 5 minutes, stirring occasionally.

3. Whisk in diced butter and grated parmesan cheese, until melted. Carefully return cooked chicken breasts to the skillet and allow to simmer in the sauce for 3 minutes more.

4. Serve chicken over steamed cauliflower rice, bulgur, pasta or rice and garnish with chopped parsley or basil, and more parmesan cheese. Enjoy!

Notes:

    • Cooking times can vary depending on the size and thickness of your chicken breasts. The internal temperature should show at least 165ºF (74ºC).
    • Go easy on the salt, or simply skip it (especially if you follow a low sodium diet), because the sauce and parmesan should bring enough saltiness.
    • If you’d like to make your own roasted bell pepper sauce: In a food processor, combine canned roasted bell peppers, garlic, basil, and Cayenne (if using). Mix until smooth.

Tips for quick chicken dinners

  • A quick chicken dinner starts with the preparation: Pound chicken breasts to get them to an even thickness so they cook quicker.

  • When frying, grilling, broiling, or sautéing chicken, remove chicken pieces as they get done to avoid overcooking while finishing other pieces. White meat and smaller pieces, such as breasts and wings, will get done faster than dark meat pieces, such as legs and thighs.

  • Keep in mind that uncovered chicken takes quicker to cook in the oven than covered chicken. Covering chicken foil allows cooking meat more evenly and gently. Toward the end of cooking time, remove the foil to crisp up the chicken.

  • Be sure to use a sharp knife when cutting or carving meat when your chicken dinner is ready. Sharp knives will make your job a lot easier, especially when having to cut in the joint areas, and will provide neatly cut slices and pieces of chicken.
